This is most likely a new user issue rather than the ROM... However-
Each time I flash a new ROM or update, doing wipe and all that, the email program does not remember my accounts, and these (5) have to be re-entered.
I do a back up using Titanium Pro as well as a full ROM back up via ROM Manager.
Any ideas of what I am missing?

When you wipe or flash over a new ROM all this information is wiped along with your other system data.

When you go into titanium backup, you should be able to restore your email accounts manually by restoring the "Mail Accounts" item

Only thing with that is it'd be per app wouldn't it? I have seen three different Email apps (not including gmail) in play on the various rom's i've tried.
