Root MT3G Sim Card and Recovery Problems

I am trying to switch ROMs from CM 6 RC2 to CM 6 (Stable). I am trying to use ROM Manager by ClockworkMod to go in to recovery. When I try to go into recovery it stays on the My Touch screen. Someone suggested that I remove the sim card and try to reboot into recovery. I tried that and it still would go. How can I get out of this mod and into something isn't going to break at recovery? I do not know anything about fastboot which seems like it might be my only option. Could you please post something that can teach me about fastboot?
