I got my phone 2 days ago, and is currently on 2 weeks leave from work so I still haven't really taken it through its paces. Although I do have the tools edge up, since I do use a ruler and pen light/torch a lot, so those may get some usage. Then I have apps edge with a few quick reference apps in there (qx calculate, pedz and quick lab ref, will add more as needed). Then I have quick contacts, S Planner and My Places. So far though, haven't put the edge panels through its paces yet for real world usability.

I only use it to launch some recently used apps, when i'm already in another app, which you can't do from the dock or homepage unless you go back to the homepage. So I guess i'm using it in place of the old quick launch toolbox. It's a bit gimmicky to be honest. I do like the edge lighting for favourite contacts though.

i really use the edge panel and im coming from from a lumia 950 and before that lumias so for me its all new and good. i just have the most used apps on the panel and i have the transparency of the icon of the edge that you need to swipe nearly invisable so its quite hidden too.
i have browser/ emails/my cctv cameras/ excel/ memo/photo gallery /waze/ whatsapp/calculator.
these are all apps i use most and dont have them in the apps folders. i like a miminal home screen aswell and even within the folder not masses of apps. i think its really useful and love it, i have the edge screen icon low on the bottom right so easy to swipe with my thumb.

noticed i cant get the custom icons to work on the edge panel though, is that the same with all the themes?
