ChompSMS allows copying of a message's text. I agree it should be a part of the stock text app's functionality, but there are other SMS options out there, and two of them (Handcent and ChompSMS) put the stock app to shame and are free.
ChompSMS also allows you the option to use the return key to send the message
Since they seem to have mostly the same features, Handcent probably does as well.Just be sure you disable notifications in the stock app or you'll be getting two notifications for every message.
