I have a 2.2 Froyo Droid X not-rooted and I really don't want to root it. I've pretty much figured how to create shortcuts with custom icons, and I'm using Launcher Pro and Desktop Visualizer for the shortcuts that are not on my dock... what I want to know is, can I customize without rooting the icons of the applications themselves or no?

Well, it depends how you want to use them. For example, if you want an icon for an app on your homescreen, you can use LP to long press and create a Shortcut to an application. When you see the box to edit the name, tap the icon to can change it to be whatever you want that's in your gallery, and then that icon will show for that app.
