I would like to know: if I install a custom android on HTC One M8, can I take download the gapps from here? http://opengapps.org/
And do I need anything else besides this?

I would also like to know what cpu I should choose for my phone (arm, arm64, x86, x64). I see that my cpu is a Snapdragon 801, which a 32-bit cpu. So should I choose arm or simply x86?

Any other tips are welcome.

Usually the rom download instructions should tell you but if not, based on the info you stated, ARM gapps should work. Take a nandroid before flashing of course, wipe the appropriate partitions, flash rom, flash gapps, wipe cache/dalvik, reboot, enjoy :D

I couldn't find any instructions on the crdroid site, but I eventually installed it nonetheless. It works ok. I used the 32-bit arm gapps.
The only problem is when an update occurs. It need to reflash it every time - and when I tried to reflash it, google play would work anymore. So it's hardly foolproof.
