if i update to 2.3.5 will i loose anything, i,e my phone contacts etc

I wouldn't have thought it would remove your contacts (it is possible to sync your phone to your gmail account).

You may loose your texts, but they can be backed up with SMS Backup and Restore

If you are worried about your contacts, there is also a Backup Contacts

why do some of my contacts show saved to sim a sim card logo and some to a blank photo logo, how do i get them all saved to sim

You're better off having them saved as Google Contacts. You can't attach any data (other than name and phone number) to SIM contacts and there's a limit to the amount you can store on the card itseld (100).

The save to SIM feature is disabled in recent Android releases.

If you want to save them to SIM however, you should be able to open the phonebook, hit menu, import/export, export to SIM Card.
