Help Gingerbread for unlocked Australian Galaxy S?

I bought my Galaxy S online and it came unlocked with 2.2. I'm able to choose between Optus, Telstra and Vodafone. Optus and Vodafone are releasing their gingerbread upgrades "soon," would that lock me to their network? How should I upgrade my phone to Gingerbread if I still want to be able to choose my carrier?

I know you did not list it but choose Virgin if you can, they add no bloatware.

I bought my one through friend in Australia, its also factory unlock running 2.2. Currently I am in Malaysia. As i Know Malaysia already have the 2.3 for sgs via kies. But when i connect my sgs it says i have the latest firmware

My current firm ware: PDA:JP5/Phone:JP3/CSC:JP4

any luck on upgrading to 2.3
