Help Needed disabling access to Gmail on a Nexus 7

So, until recently, I have been an Apple only kind of guy; iphone, ipad, etc. A couple of months ago I purchased a Nexus 7 on a whim, and long story short, I am moving from the iPhone to a Galaxy Note 2.

I want to give my daughter my Nexus 7, but I want her to still have access to the Android apps I have purchased. Is there any way for me to leave the Nexus 7 associated with my account on google, but to remove my email from the device?

Or, if that isn't possible, is there some way to associate the Nexus 7 with her gmail account, but to somehow link the accounts so she can still use my Apps?
