Why does the unlocked Nexus S come with a Simcard

Since the phone is optimized for T-Mobile's network and you can only get a T-Mobile contract with it, they put a sim card in there. It doesn't mean anything really. It's for the sales people to use if the customer is signing up for new service. That's all.

Oh, there is only one version of the phone and that's the unlocked version. It's been mentioned numerous times and a rep from Google said so also. So there is no "locked version." You're just being delusional. :p

Mine came with a sim card at its unlocked.

Yep, All Nexus S phones are unlocked out of the box, but in the USA tmobile is the only provider which provides the 3G network that is supported by the nexus S and the NS is also a tmobile phone officially so it comes with a t mobile sim but you do not have to activate the sim in order for the phone to work. It will still work with any sim.

The Nexus S is a GOOGLE official phone and NOT T-Mobile's. There's none of T-Mobile's carrier branding on the Nexus S. T-Mobile had no say, input on what to be put on the Nexus S. The Nexus S is COMPATIBLE with T-Mobile because Google has some kind of agreement/partnership with them.

If you get a SIM card with the device it is blank unless you use it to sign up for a service. Or you just keep it in the box for when you sell it later. Meanwhile just insert your own SIM. The Nexus should come unlocked but if not it's easy to unlock just like unlocking the bootloader is easy.
APNs are specific to your carrier and are easy to google in case the ROM doesn't come with a full list. Most of the APNs are automatic or easy to edit.
