Root What Apps are Safe to Delete?

I'm rooted, with stock 2.3.20. I changed the following .apk's to .bak's to keep them on the phone but prevent them from "showing up" since I've done this, my phone comes off charge at 7 am, and is at 40% battery at 10 pm. And that's with pretty steady use throughout the day.
I haven't gone further yet, but just changing these apk's made a huge impact on battery life. I leave sync on all day with the stock gmail and email sevice, and screen brightness on auto. other changes was removal of haptic feedback, wifi sleep policy changed to never, backlight changed to 15 seconds, no animations, max battery saver mode on.
