Root Galaxy S5 says "custom" after flashing official ROM?

I have flashed an official Samsung ROM from SamMobile on my Galaxy S5 using Odin, and everything has been working fine for several months (and still is). However, I just discovered that it says "Current Binary: Custom" and "System status: Custom" when I enter Odin Mode. Sources I have found online says that it should say "Official" after flashing a ROM from SamMobile... what could be the problem?

1. G900F (it's a european model, i.e. not tied to any carrier)

So I'm guessing #4 of the above might be the culprit? Any way to make it say "official" without reinstalling everything again?

That explains why you are seeing what you are seeing. Your phone has been rooted at least twice, (see Knox counter), and probably CF-Auto-Root kernel was used and installed SuperSU. Then you did not use SuperSU's unroot feature and still have a custom binary on your phone. You could re-root and then use the unroot feature prior to reflashing the stock Samsung firmware again. This, of course, will never, ever, reset the blown Knox fuse, security flag.

I'm not sure what you mean by "... still have a custom binary on your phone."? The ROM that's installed now is one downloaded from SamMobile, so I'm assuming it's an official one? Do you mean I have to un-root, flash that same ROM again, and then re-root in order to set it to "Official"?

Oh boy, I have no idea, it was 8 months ago... I know I messed around with Odin, got PhilzTouch recovery installed and installed SuperSU via some zip flash file from there (perhaps called update.zip, not sure)... Not sure if that's even a "method" for rooting?

Ok... so being rooted is always equal to it saying "Custom"? I thought it had something to with the ROM not being official (which is also weird since it's from SamMobile). Either I or Samsung (or both) are a bit confused about the terms "root" and "custom ROM" and the message "custom"...

It depends on how you rooted your phone originally. If you used chainfire's CF-Auto-Root method and SuperSU then you can go to SuperSU's settings and select, "Full unroot", and then just flash the stock Samsung firmware for your model of phone and Product Code, using Odin.

Yesterday iv used Dr Phone software which rooted my device
Now on custom status
Iv tried so many video and ways using Odin stuff but after several hours status still the same custom
And also i tried to update phone via Wi-Fi it said unauthorised and via smart switch also it didnt work

Seeking your support to direct me to the proper way by step to get rid and return phone as it was yesterday

You should be able to un-root by simply flashing the stock Samsung firmware for your precise model of phone and Product code as this will replace any Dr Fone settings and apps in the OS. There is no way whatsoever to restore your Knox Security flag once it has been tripped through rooting and your phone will always be showing it as compromised.
