Any Time is Grillin Time

Man Oh Man, those look fantastic!

I had fun cooks this weekend. My baby backs turned out great. I've owned a rib rack for years but used it for the first time this past weekend. It worked well to get that many racks on my smoker at once. I had rubbed the ribs at home and smoked them at the cabin. I discovered I had nothing particular down there for a glaze. I used a mix Ketchup, Dijon mustard, honey, and some sweet pickle juice. :) It turned out excellent. Another night I rubbed and then glazed with butter and honey some bone out chicken thighs. I had a grill full and they all disappeared when served. Complimentary dishes consisted of baked sweet potato fingers, fresh salads, steamed asparagus in a cheese sauce, baked beans, and potato salad. One breakfast consisted of a huge casserole of sausage, bacon chunks, diced ham, diced onion and peppers, ro-tel, and sharp cheddar. The other was a scramble of sausage, potato chunks, onions, and cheddar. Easy dishes to feed everyone at once. :)
We all ate too much and had a great time.

Obviously, the 3-2-1 doesn't apply to the beef short ribs. Now that you've smoked them twice, what is your best guess to cook time? I'm having a big party at the cabin in two weeks. If I can make it happen, beef ribs are on the menu. Did you use a rub? Did you have a wrap period? Rest period? I hate to do a first smoke for a group but I'm doubting I'll have the chance to try some at home first. I just hope I can come up with some... sheesh!

Short ribs are embarrassingly simple.
  1. Peal the membrane on the back
  2. Apply your favorite rub
  3. Smoke 10 hours at 225. No wrapping, no temp targets, no basting, nothing.
TLDR; Peel , rub, smoke 10 hours at 225.

My notes:
  • I've now cooked six racks, half the time the membrane comes off and leaves about 1/8" of fat on the bone site, the other half the fat comes off too, I've noticed no difference in the final product, so don't worry about it.
  • Rub was pretty much 2 cups turbinado sugar (sugar in the raw), 1/2 cup kosher salt, 1/4 cup paprika, 2tbsp course fresh ground pepper, 1tbsp garlic powder, 2 tbsp chili powder, 1/2 tbsp cayenne pepper. I think next time I'll cut the pepper in half, but that's my taste. I was experimenting with the rub for this smoke as I didn't have any store bought KC BBQ. I was complemented on the bark with the rub recipe, and there is enough for probably 6 ribs. I wound up having enough to do 4 baby back ribs the next day with a little left over.
  • I used apple pellets for my smoke because the first recipe I saw for these recommended it.

Finally, I just started using an app this weekend to create a journal of my cooks. As goodas my memory is, sometimes making things only once a year its good to jot down some notes beyond just having the recipe. I think it could be very usefull for my corned beef as I only do that once a year.

I'll be honest, I've scrolled through this thread a number of times to refresh my memory of one of my cooks. Not to mention the ideas and techniques used by others that I wanted to try. I think the app will work great as a backup :)

You can't eat the phone
The grill never rings or beeps in the middle of the night
The grill can give you years of service
The grill doesn't get hacked
It's hard to misplace the grill
Few people want to party around your phone
Anybody in the world can bother you on your phone. Only the neighbors can bother you at your grill
Your friends and family will be happier with you playing with the grill than your phone
Grills are typically cheaper
Few grills are outdated before you even leave the store
Smoking on a grill: Good. Smoking on a phone: Not so good
No monthly service fee

I am sure there are many more reasons but the choice seems pretty obvious to me! :cool: That's why I use the older phones until they literally die. More grilling and beer money!
