All the above mentioned apps are valid. I use Lookout myself. But all of them obviously need to be installed and configured before you lose your phone (or before it is stolen)!
Plan B – free, in the Market – is the 'find my phone' app that you download AFTER you lose your phone!
You can send encrypted SMS messages to your phone which will send its GPS location to your Gmail address, or wipe the SD card, or wipe the whole phone.

I'd say go with Prey too. It's free and does it's job amazingly. Never had an issue with it, and never worried again.
You can remote lock your phone as well.

You can download an app from the Market to your own phone, wherever it is, because your own phone is associated with your own Gmail account.
