Help Video Playback and What is Rooting?

I got an Avail with a pay-as-you-go plan, and it's my first personal phone of my own. This is my first smartphone, obviously, though I have used others. I got it last week, and I've really enjoyed it, aside from a few things.

First of all, it won't play videos. I've tried MP4 but the native app says it doesn't support it. Fine. So I tried MoboPlayer, and the video playback was slow and jerky. The audio was fine. On a whim I tried to play Netflix videos and I had the same trouble. I've got no idea what the problem is or how I might fix it. Or, if it's even possible to play video on this phone. I admit, that was one of the big reasons I wanted it, for on-the-go video, so if there is no way to play video without it being jerky, I'll be pretty disappointed.

My second issue is with apps taking up all my internal space. So far I've installed a bunch of apps that I can put on the SD card, but there are many that I can't move and can't uninstall(Yellow Pages, Facebook, ATT Social, etc) and I have no idea how to clear up room on my internal memory. The apps keep automatically installing updates and I keep having to go through and delete the updates to keep my memory from filling up. I've heard you can delete these apps and more with rooting, but I've never done anything like that before. I'm familiar with computers, maybe above average slightly, but I have no idea how Android works, or very much about smartphones. It's all a bit after my time. I've no idea what the pros vs. cons of rooting are, why I should or shouldn't do it, what it might mean to my phone, etc. I've tried reading some of the threads here, but it all goes way over my head, and even context clues aren't helping me much. Any newb explanations or help would be tremendously appreciated.
 
I'd tried to find where in settings it had that checkbox, and then finally on a whim, I tried the playstore settings and that's where it was. Didn't know that's what was meant by settings. Anyway, unchecked that, and it's helped so far.

I've read all the sticky stuff and the guides, but it all seems aimed at someone who knows more about this stuff than I do. The guide thing in the faq is so sparse, I don't want to start doing it and then discover half-way through that I have no idea what they're talking about, even in context. Is there a more for-newbs guide around here anywhere?

Also, any help on the video problem?
