No way to root my ZTE blade v8 pro even though the bootloader says it's unlocked. It's impossible!

The option in the developer menu is only to enable unlocking. You then have to use fastboot (using a computer and usb) to unlock - the exact command varies between devices.

Unlocking then allows you to flash a custom recovery (if one exists for the device), and that can then be used to flash the package to root it.

I keep seeing where the bootloader is made by some Chinese company and everyone is saying it's impossible to root no matter what including XDA Developers. they actually said not to look forward to ever being able to root it and get a new phone if you want one that's rooted. I would hope that wasn't the case but I don't know much about them

Yeh the phone was made by 'some Chinese company' , i.e. ZTE. And they can be very tough nuts to crack when it comes to rooting and modding.
