I'm trying to remove some of the Sprint Apps preinstalled, I was able to find them using Astro File Manager in /system/app/ but when I went to delete the file, it said "Error deleting files". What can I do?

You can't do that with Unrevoked. As you found out it doesn't allow root access to that part of the EVO.

Will they be allowing root access to modify those files in the future?

You'd probably have to ask them.
