Help Smartwatch Step Count Question

Is there someway to set the recording of my daily step count to just the Watch? My only two choices seem to be Watch & Phone or Phone. The issue I have is, I mount my phone on my motorcycle and run Waze as my GPS/Traffic. The phone thinks I'm exercising, so my 16mi commute to the office ends up recording circa 4000 steps. It's somewhat annoying and infuriating that Samsung doesn't appear to offer recording the step count from just the watch itself, or am I missing something?

There's an app for just walking in the Play Store somewhere so try adding another app.

I get at least 6000 steps a day. Using Samsung Phone and watch. My sleep times aren't syncing though. I want 8 I get 5.
