You can just toss them on to a computer and just put them back on the phone later. From my experiences, rooting doesn't erase anything tho, unless you're unlocking the bootloader as well (which will clear your memory, I think)

Correct. You can back them up to your PC using the USB cable or over wifi.
Rooting does not delete data, but unlocking the bootloader resets the device including the sdcard.
If you have them set to auto upload and sync to Google, they'll come back after a wipe. Otherwise the manual transfer method already explained.
Edit: I should clarify that statement. I don't think they will actually return to /data/media but they will be accessible via the phone or PC by interfacing your Google account.
