Fast for me too. Go into Preferences, tinker with the scroll and opening speeds, and the memory usage.
And I damn sure don't miss the side scrolling, the TW widgets, and the goofy drawer launcher on the right thing. Having enough trouble as it is getting used to the mixed-up capacitive buttons on the thing, coming from a Milestone...Menu, Home and Back are all in different positions.
You can't, those are strictly for the TouchWhiz UI. I haven't had a chance to look yet, but I am almost positive there are alternatives to the TouchWhiz widgets that you can download.

Once you decide to use launcher pro that mean you don't want to use the UI that came on the phone including their widgets. Find some widgets in the market that do the same thing or go back to the original UI.
