So I got my replacement phone and immediately rooted. Now I've decided to try s-off but no ruu I can find will work. Any ideas?

You should have taken an RUU & OTA before the root. Anyways you don't need an RUU to s-off. Unlimited.IO go here follow instructions to get s-off correctly.

There are one or two threads around here somewhere that shows how to S-off on Windows. They stopped supporting it because it was too hard to keep up with windows, Linux, and Mac.

the replacement phone came with the latest updates I think and I've read that I can't RUU if that is the case. So am I completely unable to S-Off now that I already rooted and installed a ROM?

The guide in the stickies written by remanifest will work. Just flash harmonia and go from there.
I personally followed the guide for my wifes phone and it was updated to 1.58.... Worked like a charm
