Rooted my Evo last week, got rid of the stock apps from Sprint and am tethering. But I don't understand why I might need a ROM. What can a ROM do for my phone. Is there a website I can go to to look at pictures of screens with certain ROMs?

I have been running Bionix ROMs on my Samsung Vibrant for a while and I feel the main advantages of a ROM are:
    1. Bloatware removed
    2. Manufacturer skin removed
    3. Themed to look much better (statusbar is themed, can't do that with a home replacement app)
    4. Bug fixes and updates are released a lot faster
    5. Performance improvements - my phone is much faster than it was when I bought it and the battery now lasts me 35+ hours

Along with that, an entire community usually crops up around a ROM and you end up having artists provide extras such as bootup animations, shutdown animations, custom kernels, software integration (ROM Manager, Titanium Backup, etc.), flashable themes and more.

If all you wanted was to remove bloatware, then it sounds like you're fine where you are. However, custom ROMs can take a phone a lot further.

Each of the roms in this link has its own thread in XDA or its own web site with screen shots.

    HTC Supersonic/ROMs - XDA-Developers

As far as why to install a rom, there are many that are themed and allow for modifications that the stock rom will not allow. Part of having a rooted phone for most people is to allow to make changes to pretty much anything when they want to instead of being stuck with what Sprint puts on it. Take a look around and you will see some of the great work that the developers have done for the Evo.
