Good. Deleting things from the stock Rom without knowing what you are deleting could eff up your current Rom. Some internal services are dependent on apps and vice versa. So when you delete an app that service X needs, it will force close on you . Quite possibly it may make sense unstable enough to the point it won't boot.
If you want the bloated removed thee are plenty of Rome out there that has everything that's removeable deleted for you.
And you might consider looking into a sense rom with with bloat removed. There are a lot of great sense roms out there, just look through the Roms and Kernels thread and you'll find a boat load of them. I always liked Myn's Warm 2.2 (froyo) and I haven't explored too many of the GB sense roms yet (sticking with aosp for now)

check the gingerbread guide i added a link that has the list of some of the apps that are ok to delete. it is an old list for froyo but it should still work but some apps will not be on there. it is in the life after root section.
